"At Illahe, our goal is to make wine as naturally as possible from soil to bottle. We work by hand on small lots with age-old techniques and materials. Our focus is to grow and make quality Pinot Noir and white wines that express the vintage and their varietal characteristics. We don't use enzymes or additives. Some of our wines are made entirely by hand, with no electricity or modern mechanization. We use a gentle wooden basket press and age our Pinot Noir in French and Oregon oak."

Tempranillo Rose $19

The 2016 Illahe tempranillo rosé offers fresh aromas of Mt. Hood strawberries, lime zest, green mangos and rhubarb. This barrel fermented rosé gives a lean body with notes of meyer lemon, kumquat, dragonfruit, and gooseberry. The rosé is a perfect food wine, complementing diverse dishes and cleansing the palate with a clean, mineral finish.


Pinot Gris $19

The 2017 Illahe pinot gris is layered with complex fruit and starts with notes of crisp granny smith apple, bright lemon zest, and hints of clove, paired with light notes of papaya and starfruit. Part of the fruit from the 2017 pinot gris is from our estate vineyard and part is from our neighbors at Erratic Oaks Vineyard. Both sites are heavily influenced by the Mount Pisgah weather patterns and soil structures. It is also influenced by the neutral oak it is vinified in, which adds creaminess and texture with lingering flavors of almond butter and a spicy finish of cardamom creates an exciting and flavorful wine that is sure to leave you wanting more.


Gruner Veltliner $19

The 2017 Illahe grüner veltliner introduces itself with light but dense aromas of dried peach, honey crisp apple, and fresh cedar board. This wine is fermented partially in acacia barrels which offer herbal flavors and complex texture. The palate also contains flavors of red grapefruit, graham cracker, and white nectarine. The balanced acid and strong mouthfeel create a beautiful wine ready for drinking or aging.


Pinot Noir $25

The aromas of the 2017 Illahe Vineyards Estate Pinot Noir begin with strawberry, tamarind, and blackberry then broaden along the palate to include chalk, tobacco leaf, chocolate, and earth. The acid supports a complete yet not overwhelming tannin balanced between skin and oak. The wine retains its velvet mouthfeel through a process of clarification by racking. For an entry level pinot, this wine is a great value and will last 6 to 12 years under the best conditions.


ILLAHE BON SAUVAGE ESTATE PINOT NOIR $33

The 2016 Bon Sauvage presents clear but not overwhelming notes of oak. The grapes from this vintage were taken from the lower part of our hill which were lighter and less influenced by the hot summer sun. The combination of 25% new oak and lighter fruit produced a very Burgundian wine. It opens with strong aromas of cedar chest and fresh plum. Red flavors of raspberry and strawberry, paired with dark flavors of black cherry and blackberry give this blend a strong backbone and bold palate. The smooth tannins and strong structure give the newest Bon Sauvage what it needs to survive in the bottle for years to come.
