USA Cabernet Sauvignon
This week we are excited to try four Cabernet Sauvignon from 2 states! Washington and California. Washington does some amazing Cabs, and we stand on the shoulders of Napa giants who have paved the way of fine wine in America. All of these wines are pretty serious, especially when you bring up Napa. Yay for Cabernet!

Wine Tasting: $25
Silver Totem, Cabernet Sauvignon Horse Heaven Hills, Washington $18
All Cabernet from the HHH. Aromas of cherry, cedar, and violet. Stunning structure and balance with flavors of bramble, currant, pepper, and blackberry. Aged for 20 months in 50% neutral oak. Medium bodied with a soft tannin.
Brendel, Cabernet Sauvignon, Napa Valley, California $30
Brendel Wines is owned by Gaylon Lawrence, who also happens to be the proprietor of the world-famous Heitz Cellars, and Burgess (see below)! Wanting to make an approachable (not crazy expensive) Napa wines that stays true to its soil, they have done just that. They crafted this classic Napa Cab with fresh aromas of eucalyptus and vibrant red and black fruits. The palate follows the nose and finishes with a thread of softer tannins.
Matthews, Cabernet Sauvignon Columbia Valley, Washington $44
Deep ruby in the glass with purple hues. The rich bouquet of spiced black plum and cocoa nib are balanced with aromas of fresh earth and crushed flint. Intense and opulent flavors of ripe blackberry, cedar, mocha, and black currant, and ripe tannin. Cherry cordial and cola linger on the long, quenching finish.
76% Cabernet Sauvignon, 15% Merlot, 6% Cabernet Franc, 2% Petit Verdot, 1% Malbec
Burgess, Napa Cab Napa Valley, California $50
Burgess has been in Napa a long time, 1972. Mike Grgich (Grgich Wines) and Warren Winiarski (Stage Leap Winery) used to work there before they skyrocketed to fame in the 1970’s. A dense and concentrated cabernet with aromas and flavors of confectionary blackberry and stewed cassis. The lush fruit is brought into balance by high tone herbal aromatics of mint, sage, and sweet tobacco. The distinctively thick-skinned Cabernet grapes provide a long velvety finish.
